It's been pretty fall like here in Missouri, which is good, since it is fall. Ok, nevermind. I think what I'm trying to say is that ti's been kinda dark and rainy this fall. Although the leaves have been gorgeous this darkness is making me feel yucky. Know what I mean? Since it's been kinda dark and drear I decided I wanted to revert back to summer for a day, so I made this Sunshine cake! Man oh man is it sunshiny! Here is the recipe:
Sunshine Cake
1 box yellow cake mix
1 small can mandarin oranges (with juice)
1 cup vegetable oil
4 eggs
Beat on medium speed until well blended. Pour into a greased and floured cake pan and bake at 350 until toothpick comes out clean. It takes about 25 minutes.
Let cake cool completely.
Then fold together 1 large tub cool whip, 1 small can crushed pineapple (with juice) and one small box of vanilla pudding. Fold that all together and ice your cake! It's light, and airy, and cool and fun and pretty.
I suspect I'll make it again before the dreaded winter is over...just to put some warmth in my soul!
